Beat the eggs with the sugar until you have a soft, well-beaten mixture, then add the zest and orange-flavoured extra virgin olive oil, continuing to beat. Now add the flour and baking powder and continue beating.
Finally, pour the mixture into your chosen baking tin. A 24 cm round cake tin or a 26 x 26 cm square tin will do. If they are not silicone, we recommend greasing them well with butter.
Sprinkle the surface with raisins, pine nuts and sugar. Bake at 180 degrees for 40 minutes in a static oven.
